I love Sundays. Somehow, it seems like the world has taken a day off. There is some special vibe in the air that makes people a little bit slower, happier and more relaxed. Usually, my Sundays end up being rather hectic (or just full), so I decided to take it slow last week and bake something nice.
As you can tell, I'm all about healthy desserts lately! I've really been craving sugar and this way, it's not even too bad. Go me! I found these on
Uit Pauline's Keuken and they looked too good not to make. She put in some blueberries, but you can go completely crazy on that part! I put in some almonds, but you could put in raspberries, chocolate chips, caramel, ... Anything that sounds good to you.
I used paper liners because I though they looked cute, but I would recommend using silicone moulds if you have them. Since you don't use any butter, sugar or flour (
say what??) they tend to stick to the liners and unless you don't mind eating some paper, it's not very yummy. I didn't add any sweetener because the banana is sweet, but if you like a sweet muffin for dessert, I would. I personally think some maple syrup would be over-the-top delicious with these.

Actually, I might drizzle some over next time I eat one.. No matter how you make these, they'll turn out nice! And they are easy peasy to make. Enjoy!
Ingredients
for 10 muffins
- 1 banana
- 2 eggs
- 125 ml (1/2 cup) milk
- 2 teaspoons baking powder
- 125 grams ( cup) rolled oats
- 1 teaspoon cinnamon
- Blueberries, raspberries, almonds, walnuts, chocolate chips, ...
Preheat the oven to 170°C/340°F. In a bowl, mash the banana.
Add the eggs, milk, baking powder and oats and mix until everything is properly combined. Add in the cinnamon and give it a nice stir. Add in whatever you like (you could combine!) and stir it in.
Divide the dough over 10 muffin liners and bake in the oven for 30 to 35 minutes. When they look golden brown, they'll be fine. Let cool, make a cup of tea or coffee and enjoy!
