A couple of months ago, I posted a recipe for maple almond granola. Now if you haven't tried that yet, I advise you to do so as soon as you can, because it is delicious! Guess what I found now? Maple almond cookies. Yup, that's right. It's like the granola, but even better, because you can eat it at any time of the day.

Okay, so this recipe wasn't exactly planned to go up today, but sometimes things in life do not turn out the way you want them. Not dramatically by the way, but let me explain: I wanted to bake some delicious muffins Tuesday after class, but soon realized we didn't have enough eggs to make them. No biggie, I went to the grocery store today and picked some up. I was really excited to try this recipe, so when I grabbed all the ingredients I needed, I noticed one single ingredient was missing: an apple. And there was no way I wanted to go back to the grocery store - I'm a little stubborn sometimes. SO I've got this amazing recipe instead.

I've told you before that Instagram has become an obsession for me. I don't know what pictures normal people see, but my Instagram is filled with pictures of food! A little bit obsessed maybe? One of my favourites is Clean Eats Charlotte, a beautiful British girl with the most mouth wathering pictures! When I bumped into these vegan coconut cookies from her, I just knew I had to make them.
